17% — the workhorse

A nominal 17% specification (typically quoted with a tolerance such as 16–18%) is the most widely traded coconut milk grade globally. It delivers recognisable coconut milk character and adequate richness in cooked applications while remaining the most cost-efficient option per litre.

It is the default choice for retail canned coconut milk, food service packs, and any application where the product is diluted or combined with other liquid ingredients during cooking. If a manufacturer is uncertain where to start, 17% is the correct sample to request first.

22% — the premium band

At around 22% fat, coconut milk delivers noticeably greater viscosity, a fuller mouthfeel, and better carrying of fat-soluble flavour compounds. This matters most in ready-meal and sauce manufacturing, where the coconut milk must remain perceptible after being combined with spices, acids, and other bulk ingredients.

The 22% band is also where premium retail positioning typically sits. For brands competing on quality claims rather than price, the difference between 17% and 22% is detectable by consumers in direct comparison — particularly in simple preparations where the coconut milk is the dominant ingredient.

24% and above — cream territory

Above roughly 22–24%, the product is generally designated coconut cream rather than coconut milk. The emulsion becomes thick and spoonable at ambient temperature and will set firm under refrigeration.

This is the correct band for dessert manufacturing, dairy-alternative frozen desserts, confectionery fillings, and whipping applications. It is also used industrially as a concentrate: some manufacturers import at high fat content and dilute in-factory, reducing the volume of water shipped across the world and lowering landed cost per kilogram of fat.


Emulsification, Stabilisers and Separation Behaviour

Fat content alone does not determine whether a coconut milk performs well. The emulsification system does, and this is where specifications most often need to be negotiated in detail with a coconut milk manufacturer.

What causes separation

Coconut milk is a naturally unstable emulsion. Left undisturbed, fat globules migrate upward and form a thick cream layer above a thinner aqueous phase. This is not spoilage and is entirely normal in clean-label products — but whether it is acceptable depends entirely on the end application and consumer expectation.

Higher fat products separate more visibly. A 24% cream will form a pronounced solid layer; a 9% light milk will show comparatively little. Temperature cycling during sea freight and warehousing accelerates the effect.

  • Clean label, no additives: Coconut extract and water only. Separation occurs and is declared on-pack as normal (“shake well before use” or similar). Preferred for organic, natural-positioned, and minimal-ingredient retail lines. Homogenisation reduces but does not eliminate separation.
  • Emulsifier only: Typically a small addition of an approved emulsifier to hold the fat phase in suspension. Produces a visibly uniform product without the viscosity increase a hydrocolloid brings. Suitable where appearance matters but pourability must be retained.
  • Emulsifier plus stabiliser: An emulsifier combined with a hydrocolloid such as a gum. Delivers the most visually stable product across a long ambient shelf life and through temperature variation. Standard for retail canned lines where consumer expectation is a smooth, uniform pour.

Permitted additives and their declaration requirements differ between the EU, the US, and other markets, and organic certification restricts the available options considerably. Behaviour under heat and acid

For sauce and ready-meal manufacturers, two further questions matter more than the headline fat number:

  1. Does the emulsion hold when heated? Coconut milk can split under sustained high heat, releasing free oil. Higher fat products with a robust emulsification system generally perform better in retort and long-cook processes.
  2. Does it hold in an acidic system? Tomato, tamarind, citrus, and vinegar all lower pH and destabilise coconut emulsions. If your formulation is acidic, request samples specifically for acid-stability trials rather than assuming a standard specification will hold.

What Else Belongs on the Specification Sheet

Fat content is the headline, but a complete coconut milk specification for food manufacturing should also state:

  • Total solids — a useful cross-check against the declared fat figure
  • pH — relevant to process design and microbiological stability
  • Viscosity — with the measurement method and temperature stated, as figures are meaningless without them
  • Colour and appearance — including whether separation is expected and acceptable
  • Microbiological parameters — total plate count, yeast and mould, and pathogen absence criteria
  • Heavy metals and MRL residue limits — with batch certificates of analysis available on request
  • Shelf life by format — ambient shelf life differs substantially between canned and bulk aseptic
  • Allergen and certification status — organic, Fair Trade, Halal, Kosher, BRC as applicable

A supplier that can issue this full specification without delay is demonstrating quality infrastructure. One that cannot is telling you something useful.


Format Decisions That Interact With Fat Content

Fat specification and packaging format are not independent choices. Higher fat products behave differently in different formats, and the cost logic changes with volume.

  • Bulk aseptic (IBC or bag-in-box): The lowest cost per litre and the standard choice for in-factory use. High-fat concentrates are frequently shipped this way precisely because shipping water is expensive — dilution happens at your facility.
  • Canned: The established retail and food service format. Fat content is usually fixed to a standard retail expectation, and separation behaviour becomes a consumer-facing consideration.
  • Carton and pouch: Growing in European and US retail. Generally suits standard and light fat bands better than cream-grade products, which can be difficult to dispense from a carton.

How to Brief a Coconut Milk Manufacturer

The fastest route from enquiry to a working specification is to give the supplier the application, not just the number. A useful first enquiry states:

  1. The finished product you are making and the process it goes through — retort, hot fill, frozen, ambient
  2. The target fat band, or the sensory outcome you need if you do not yet know the band
  3. Whether the formulation is acidic, and its approximate pH
  4. Whether separation is acceptable, or whether a uniform product is required
  5. Target market and required certifications — this constrains which additives are permitted
